Lately, I’ve been enjoying fish cakes quite a lot. I’ve always liked them, but with the weather turning colder, fish cakes have become a real craving. Today, I’m sharing how to make ‘Corn Cheese Crispy Fish Cake Skewers’ – a delightful snack that’s incredibly tasty and satisfying when freshly made. The ingredients are simple, and the preparation is easy, making it a perfect dish for both novice cooks and those living alone.
Ingredients- 2 square fish cakes (I used Samjin Eomuk’s Sea Food Square Fish Cakes)
- 150g mozzarella cheese
- 2 Tbsp sweet corn (canned)
- 2 Tbsp ketchup (or to taste)
- 2 Tbsp cooking oil
Cooking Instructions
Step 1
The fish cakes I’m using today are Samjin Eomuk’s Sea Food Square Fish Cakes, a product from a certified premium seafood company in Busan, making them extra trustworthy.
Step 2
First, add about 2 tablespoons of cooking oil to your frying pan.

Place the square fish cakes you prepared into the pan, arranging them neatly.
Step 4
Cook the fish cakes over medium heat for 2 minutes on each side, for a total of 4 minutes, until they are golden brown. If you find it hard to time precisely, just cook them until they achieve a nice golden color. Since fish cakes are already cooked, they don’t need prolonged cooking.
Step 5
Once both sides of the fish cakes are nicely browned, carefully remove them from the pan and set them aside on a plate.

Now, thoroughly wipe away any remaining oil from the pan using a paper towel. It’s crucial not to add any oil when making the cheese crust; the cheese itself will melt and release its own oils.

In the completely dry pan, spread out 75g of mozzarella cheese (half a packet per fish cake). We’ll use one full packet of cheese per fish cake. For a crispier crust, spread the cheese thinly, forming a long, compact layer across the pan.

Reduce the heat to low and wait patiently until the edges of the cheese begin to melt.

As the cheese starts to melt, sprinkle 1 tablespoon of sweet corn evenly over it. The sweetness of the corn will blend beautifully with the cheese for a fantastic flavor.

Once the cheese has melted and spread across the pan, and the edges start to show a light brown color, carefully lift it to check. You’re looking for the entire bottom of the cheese to have a golden-brown hue. This process usually takes about 2 minutes. Properly crisping the cheese is key to achieving that satisfying crunchy texture.

When the bottom of the cheese crust is uniformly golden brown, place the previously fried fish cakes slightly inward from the edges of the cheese.

Lay a wooden skewer over the fish cake. You can use a chopstick if you prefer. This will help create a handle, making it easy to hold and eat like a skewer.

Now, carefully lift the edges of the remaining cheese and fold it over to completely cover the fish cake and the skewer. This step secures the skewer firmly within the fish cake, ensuring it won’t wobble and results in a neat roll.

Gently roll the fish cake around the skewer, similar to how you would make an omelet or egg roll, tilting the pan slightly as you go. The melted cheese will help it roll smoothly.

Ensure the final rolled edge is tucked underneath the rest of the roll to secure it completely. Since all the ingredients are already cooked, you’re essentially just shaping them together. This ensures the skewer stays in place!
