Ingredients- 1 bowl of rice
- 3-4 sticks of imitation crab meat
- 2 eggs
- 50g white part of green onion
- 20g carrot
- 1/4 bell pepper
- 3 Tbsp cooking oil
Seasoning- 2 Tbsp oyster sauce
- 2 pinches of salt
- 1 pinch of pepper
- 2 Tbsp oyster sauce

Cooking Instructions
Step 1
Prepare the ingredients. Clean and get everything ready for your delicious fried rice!

Finely mince the carrot. This adds a nice texture and vibrant color to the fried rice.

Remove the seeds from the bell pepper, then mince it finely, similar to the carrot. The crispness of the bell pepper will add freshness.

Finely chop the white parts of the green onion. Sautéing these whites first to create ‘scallion oil’ will infuse the fried rice with a wonderful smoky aroma and deeper flavor, giving it that authentic wok-hei taste. Don’t skip this step!

Shred the imitation crab meat into bite-sized pieces by hand. It’s best to shred it so there’s still some texture, rather than making it too fine.

Heat 3 tablespoons of cooking oil in a wok or large skillet over high heat. Add the chopped white parts of the green onion and stir-fry for about 2 minutes until fragrant and the oil is infused with scallion flavor. This is your ‘scallion oil’ base.

Add the minced carrot and bell pepper to the wok with the scallion oil. Continue to stir-fry over high heat for another 2 minutes. You want the vegetables to be tender-crisp, not mushy.

Reduce the heat to medium. Push the cooked vegetables to one side of the wok. Crack the 2 eggs into the empty space and stir them around quickly with chopsticks or a spatula to create scrambled eggs. Cook until just set.
