Main Ingredients
- 200g fresh bean sprouts
- 4 sticks of imitation crab meat (surimi)
- 1/2 cup finely chopped green onions
- 2 cloves garlic
Seasoning & Others
- Cooking oil, as needed
- 1 Tbsp oyster sauce
- A pinch of sesame seeds
- Sesame oil (optional)
- Cooking oil, as needed
- 1 Tbsp oyster sauce
- A pinch of sesame seeds
- Sesame oil (optional)
Cooking Instructions
Step 1
Rinse the bean sprouts thoroughly under cold running water to remove any dirt or debris. Drain them well, shaking off excess water. Keeping the bean sprouts crisp is key to the dish’s texture.
Step 2
Fold each stick of imitation crab meat in half and then cut it into long, thin strips (julienne). Avoid cutting them too thinly, as they might break apart during cooking. Slightly thicker strips will hold up better.
Step 3
Finely chop the green onions. Slice the garlic cloves thinly into ‘chips’ or ’rounds’. The garlic will add an aromatic base to the stir-fry.
Step 4
Heat a wok or a large skillet over medium-high heat and add a generous amount of cooking oil.
Step 5
Once the oil is shimmering, add the chopped green onions and sliced garlic to the pan.
Step 6
Stir-fry the green onions and garlic until they become fragrant and lightly golden brown. Be careful not to burn them. This step infuses the oil with delicious flavor.
Step 7
Add both the prepared bean sprouts and the julienned crab meat to the pan with the infused oil.
Step 8
Gently toss everything together to combine. At this stage, you are just mixing the ingredients before adding the main seasoning.
Step 9
Pour the oyster sauce (1 tablespoon) into the pan, ideally around the edges, to help it distribute evenly over the ingredients.
Step 10
Stir-fry quickly until the bean sprouts are just tender-crisp – they should still have a slight crunch. This should only take about 1-2 minutes over high heat to prevent them from becoming soggy. For an extra touch of aroma, drizzle in a little sesame oil just before turning off the heat, if desired.
Step 11
Transfer the cooked stir-fry to a serving dish. Sprinkle with sesame seeds for garnish. Allow it to cool slightly, then cover and refrigerate. It’s delicious to enjoy the next day! Enjoy your meal 🙂
