Easy and Delicious Crab Stick and Vegetable Pancake Recipe

Sometimes, crab sticks (surimi) are sold in packs of 2-3 rather than individually. This time, I had 3 crab sticks left after making sushi rice and decided to turn them into delicious pancakes! The tender crab meat combined with the crisp vegetables is a hit with both kids and adults, making it a satisfying meal or a great appetizer. No more worrying about leftover crab sticks! Create a wonderful pancake easily and quickly.

Main Ingredients
  • Crab sticks (surimi) 6 sticks
  • Carrot 1/4
  • Zucchini or regular squash 1/3

Cooking Instructions

Step 1

First, prepare the vegetables. Wash the carrot thoroughly. Wash the squash under running water. Finely julienne or mince 1/4 carrot and 1/3 squash. Cutting the vegetables very small ensures they cook evenly within the pancake.

Step 2

Prepare the crab sticks. Take the 6 crab sticks and shred them into bite-sized pieces with your hands, or finely chop them with a knife. Add the shredded or chopped crab sticks to the bowl with the prepared carrots and squash.

Step 3

Now it’s time to mix the batter ingredients. Crack 2 eggs into the bowl containing the vegetables and crab sticks. Add 3 tablespoons of tempura flour or pancake mix. Add a small pinch of salt to enhance the flavor. (Since crab sticks are already seasoned, it’s best to adjust the salt amount after tasting.)

Step 4

Use a spatula or spoon to mix all the ingredients thoroughly until evenly combined. Ensure the ingredients are well incorporated without clumping. If the batter seems too thick, add a little more beaten egg. If it’s too thin, add a bit more flour or pancake mix to reach the desired consistency. The batter should hold its shape when scooped with a spoon.

Step 5

Heat a frying pan over medium heat and add a generous amount of cooking oil. It’s important to get the oil temperature right so the pancakes cook evenly and turn golden brown without burning. Scoop spoonfuls of the batter and carefully place them onto the hot pan, shaping them into desired sizes. Avoid making them too thick, as this will increase cooking time for the inside.

Step 6

Now, fry the delicious pancakes. Reduce the heat to medium-low. Once one side is golden brown, carefully flip the pancakes with a spatula. Cook the other side until it’s also golden and slightly crispy. They are ready when both sides are a beautiful golden brown color. Enjoy them while they are warm for the best taste!
