Main Ingredients- Assorted leftover vegetables from the fridge (onion, bell pepper, mushrooms, etc.), chopped
- Shrimp, peeled and deveined, about 100g
- Tortillas, 1-2 sheets
- Cream cheese, about 2-3 tablespoons
- Shredded pizza cheese (mozzarella) generously

Cooking Instructions
Step 1
First, wash and prepare any leftover vegetables you have in your refrigerator. Onions, bell peppers, mushrooms, corn – any vegetables you have will work wonderfully! Chop the vegetables into bite-sized pieces, suitable for pizza toppings. Cutting them too large might extend the cooking time, so aim for a moderate size.

Prepare the shrimp, which will add a delicious texture to your pizza. If using fresh shrimp, make sure to peel and devein them, then rinse thoroughly. If using frozen shrimp, thaw them and pat them dry before use.
Step 3
Heat about 1-2 tablespoons of olive oil or grapeseed oil in a pan over medium-high heat. Add the prepared shrimp and sauté them first. Shrimp cook best when quickly seared over high heat to maintain their tender, bouncy texture. Once the shrimp turn pink and are almost cooked through, proceed to the next step.
Step 4
When the shrimp are nearly done, add all the chopped vegetables to the pan and stir-fry them together. Cook just until the vegetables soften slightly. Overcooking can make them lose their crispness. Season with a pinch of salt and pepper to taste. Set aside the sautéed shrimp and vegetables.

Now, prepare your tortilla. Lay one tortilla flat and spread 2-3 tablespoons of store-bought spaghetti sauce or tomato sauce evenly over it. Make sure to spread the sauce all the way to the edges for maximum flavor.

Arrange the sautéed shrimp and vegetables evenly over the sauce. Be mindful not to overload the tortilla, as this can make it soggy or cause the toppings to slide off.

It’s time to add the cream cheese for a wonderfully smooth and rich element! Dollop spoonfuls of cream cheese sporadically over the toppings. As it melts, it will create a luscious, creamy layer.

Finally, generously sprinkle shredded pizza cheese (mozzarella) over the toppings. Don’t be shy with the cheese – more is always better! Bake in an oven or air fryer until the cheese is melted and bubbly, and the edges of the tortilla are slightly crisp. Your delicious cream cheese tortilla pizza is ready!

Bake in a preheated oven at 200°C (400°F) for about 10 minutes, or until the cheese is golden and melted and the tortilla edges are lightly crisped. If using an air fryer, 180°C (350°F) for 7-8 minutes should suffice. Adjust baking time as needed based on your appliance and preference.
