Basic Ingredients
- 200g Pasta (e.g., Farfalle, Spaghetti)
- 400ml Soy Milk (sweetened or unsweetened, according to preference)
- 300ml Whipping Cream (heavy cream can be substituted)
- 100ml Stock (chicken or vegetable stock recommended)
- 1 piece Solid Curry Roux (approx. 25g, mild or spicy, according to preference)
- 1 Tbsp Minced Garlic
- 1/2 Onion (finely chopped or thinly sliced)
- 12 Cocktail Shrimps (thawed and patted dry)
Seasoning & Aromatics
- 1/2 Tbsp Black Pepper (adjust to taste)
- 2 slices Cheddar Cheese
- 50g Mozzarella Cheese
- A pinch of Parsley Flakes (for garnish)
- A pinch of Parmesan Cheese Powder (for added flavor)
- 1/2 Tbsp Salt (adjust to taste)
- 1/2 Tbsp Black Pepper (adjust to taste)
- 2 slices Cheddar Cheese
- 50g Mozzarella Cheese
- A pinch of Parsley Flakes (for garnish)

Cooking Instructions
Step 1
First, bring a generous amount of water to a boil in a pot with a pinch of salt. Once boiling, add the pasta and cook for 1-2 minutes less than the package instructions recommend, aiming for al dente. Reserve about 1 cup of the pasta cooking water before draining.
Step 2
Heat a separate pan over medium heat and add a little cooking oil. Sauté the minced garlic until fragrant, being careful not to burn it. Add the chopped onion and cook until translucent, allowing its sweetness to develop.
Step 3
Pour the soy milk and whipping cream into the pan with the sautéed garlic and onions, stirring well to combine. Once the cream is smooth, add the solid curry roux and cheddar cheese slices. Reduce heat to low and stir continuously until the curry is completely dissolved and the sauce thickens slightly. Constant stirring is key to prevent sticking.
Step 4
As the curry sauce becomes smooth and begins to thicken, add the cooked pasta and about 100ml of the reserved pasta water. Stir well, allowing the sauce to coat the pasta evenly. If the sauce seems too thick, add a little more pasta water to reach your desired consistency. Let it simmer gently to meld the flavors.
Step 5
Add the prepared cocktail shrimps to the pan and cook for another 2-3 minutes until they are pink and cooked through. Finally, add the mozzarella cheese generously and allow it to melt into the sauce. Taste the pasta and adjust seasoning with salt if needed.
