Egg Salad Dressing- 16 Tbsp Mayonnaise
- 2 Tbsp Dijon mustard
- 2 Tbsp Sugar
- Freshly ground black pepper to taste
Cooking Instructions
Step 1
Place 12 clean eggs into a pot.
Step 2
Fill the pot with enough water to cover the eggs completely. Add 1 teaspoon of salt to help with seasoning.
Step 3
Add 3 tablespoons of vinegar to the water. This helps make the eggshells easier to peel.
Step 4
Bring the water to a boil over high heat. Once boiling, reduce the heat to medium and cook for 10 minutes. Be careful not to overcook, as this can make the yolks dry.
Step 5
Immediately transfer the boiled eggs to a bowl of cold water to stop the cooking and cool them down. This makes peeling much easier. While the eggs are cooling, finely chop the fresh chives.
Step 6
Once the eggs have cooled enough to handle, peel them and place them in a large bowl. Mash the eggs thoroughly using a fork or a potato masher until they are smooth and free of large lumps.
Step 7
Add the finely chopped chives to the mashed eggs for a fresh, aromatic touch.
Step 8
Add 16 tablespoons of mayonnaise, the base of your egg salad dressing.
Step 9
Incorporate 2 tablespoons of Dijon mustard for a rich, tangy flavor. (Regular mustard can also be used.)
Step 10
Add 2 tablespoons of sugar to balance the richness and enhance the overall taste.
Step 11
Finally, season with a pinch of freshly ground black pepper. Mash and mix everything together gently, ensuring the chives and dressing are evenly distributed throughout the egg mixture. Thorough mixing is key for a cohesive flavor.
Step 12
Spread a generous amount of the prepared egg salad mixture onto a slice of bread.
Step 13
Top with another slice of bread to complete the sandwich.
Step 14
Wrap the sandwich tightly in plastic wrap to hold its shape. Refrigerate for at least 30 minutes. This chilling period allows the flavors to meld and the sandwich to set.
Step 15
Once chilled, trim the crusts off the sandwich if desired. Unwrap the plastic wrap, and your delicious egg salad sandwich is ready to enjoy!
Step 16
Wishing you a delicious day today! May your meals always be delightful.
