Essential Ingredients- 150g blanched cauliflower (pre-blanched into bite-sized pieces)
- 1 potato (medium-sized)
- 1/6 onion (small)
- 2 tbsp butter
- 2 cups chicken broth (approx. 400ml)
- 1 cup milk (approx. 200ml)
- 1/2 cup heavy cream (approx. 100ml)

Cooking Instructions
Step 1
First, prepare the vegetables. Peel the onion and potato, then slice them into thin julienne strips. Cut the cauliflower into large, bite-sized florets. (Pre-blanching the cauliflower can shorten the cooking time.)
Step 2
Melt 2 tablespoons of butter in a pot over medium heat. Add the julienned onion and potato, along with the cauliflower florets. Sauté for about 3-5 minutes until the vegetables become slightly translucent. This process enhances the natural sweetness and flavor of the vegetables.
Step 3
Pour in the 2 cups of chicken broth. Bring to a simmer over medium-low heat and cook for about 10-15 minutes, or until the vegetables are completely tender. You can check for doneness by inserting a fork into the potato and cauliflower; they should be easily pierced.
Step 4
Reduce the heat to low and add 1 cup of milk. Using an immersion blender, carefully blend the ingredients directly in the pot until smooth and creamy. Continue blending until there are no lumps and the soup has a velvety consistency. (If you don’t have an immersion blender, you can use a regular blender. Be cautious when blending hot liquids.)
Step 5
Return the pot to low heat and bring it back to a gentle simmer. Stir in 1/2 cup of heavy cream. Cook while stirring occasionally until the soup thickens to your desired consistency. If it becomes too thick, you can add a little more milk.
