Ingredients- 2 medium potatoes
- 1/2 medium onion
- 300ml milk
- 2 tbsp butter

Step 1
First, prepare your ingredients. Thinly slice half an onion. Peel the two potatoes and cut them into roughly 2-3 cm chunks. Preparing them like this will shorten the cooking time in the next steps.
Step 2
Place the cut potatoes into a microwave-safe dish. Add a tiny amount of water (about 1-2 tablespoons). Cover the dish loosely or use plastic wrap, poking a few holes in it. Microwave on high for about 10 minutes, or until the potatoes are fork-tender. This pre-cooking step makes them soft enough to mash or blend easily later.
Step 3
In a medium saucepan, melt 2 tablespoons of butter over medium-low heat. Once melted, add the sliced onions. Sauté the onions, stirring occasionally and being careful not to burn them, for about 6-7 minutes until they become translucent and fragrant. Sautéing the onions deepens the flavor of the soup.
Step 4
Transfer the microwaved potatoes, sautéed onions, and 300ml of milk into a blender (or use an immersion blender). Blend until the mixture is completely smooth and creamy, with no lumps remaining. If you don’t have a blender, you can mash the hot potatoes very thoroughly with a fork or masher, then mix them with the sautéed onions and milk.
Step 5
Pour the blended soup mixture back into the saucepan. Cook over low heat, stirring gently, until it just begins to simmer. Let it simmer for another 1-2 minutes to reach your desired consistency. Finally, season with salt and pepper to taste. Your smooth and delicious potato soup is ready!
