Main Ingredients- 200g green peas
- 50g black soybeans
- 3 cups water (approx. 600ml)
- 80g somyeon (thin Korean wheat noodles, per serving)
- 2 Tbsp sliced almonds
- 5g toasted sesame seeds (approx. 1 Tbsp)
Seasoning & Others- Salt to taste
- Salt to taste
Cooking Instructions
Step 1
First, rinse the black soybeans thoroughly and soak them for at least 4 hours, or preferably overnight. Soaking makes them tender, reduces cooking time, and aids digestion.
Step 2
Shell the fresh green peas, keeping only the peas. Removing the shells ensures a smoother, less cloudy broth.
Step 3
Combine the shelled green peas and the soaked black soybeans in a pot. Add 3 cups (approx. 600ml) of water. Cover the pot with a lid and bring to a boil over high heat. Cook for exactly 11 minutes.
Step 4
While the peas are boiling, skim off any foam that rises to the surface. This step helps to remove any impurities and results in a cleaner, more refined flavor for the broth.
Step 5
After precisely 11 minutes of boiling, drain the cooked peas and immediately rinse them under cold running water. This cooling step helps the peas maintain their shape and prevents them from becoming mushy.
Step 6
Optionally, you can peel the skins off the cooked black soybeans. Removing the skins will result in an even smoother texture for your green pea broth.
Step 7
Your peas are now ready to be blended into a delicious broth! The vibrant colors are a promising sign of the freshness to come.
Step 8
In a blender, combine the cooked peas (green and black), 3 cups of cold water, 2 tablespoons of sliced almonds for richness, and 5 grams of toasted sesame seeds for added aroma. Blend until completely smooth, ensuring no lumps remain.
Step 9
Season the blended pea broth with salt to your preference. It’s best to add salt gradually and taste as you go, aiming for a balanced flavor that highlights the natural sweetness and nuttiness of the peas.
Step 10
Cook the somyeon noodles according to package directions, then rinse them under cold water and drain well. In a serving bowl, arrange the drained noodles. Pour the chilled, creamy green pea broth over the noodles. Garnish with shredded cucumber or a hard-boiled egg if desired. Enjoy your refreshing Green Pea Noodles!
