How to Make Delicious Soybean Okara Ice Cream

Introducing a delightful soybean okara ice cream that’s both sweet and nutty, perfect for a refreshing summer dessert. This healthy ice cream is a fantastic and wholesome treat for children during hot weather.
Ingredients- Soybean Okara (fresh) 300g
- Organic Sugar 3 Tbsp (adjust to taste)
- Salt a pinch
- Water 1.5 Tbsp
- Cornstarch (or potato starch) 1 Tbsp
- Maple Syrup 3 Tbsp
- Almonds (chopped or slivered) a little
- Black Sesame Seeds a little
- Pistachios (chopped or slivered) a little
Cooking Instructions
Step 1
Begin by soaking the soybeans in water for at least half a day or 6 hours until thoroughly softened. This step is crucial for achieving a smooth okara texture.

Step 2
After soaking, gently rub the soybeans between your hands to remove the skins, then rinse them in clean water. Don’t worry if a few skins remain. Place the rinsed soybeans in a blender with the specified amount of water and blend until very smooth to create the okara paste. If you don’t have a blender, a fine grater can also be used.

Step 3
Transfer the smooth okara paste to a saucepan. In a small bowl, whisk the cornstarch with the 1.5 Tbsp of water until no lumps remain, then pour this mixture into the saucepan with the okara and stir well to combine.

Step 4
Add the organic sugar (3 Tbsp), a pinch of salt, and maple syrup (3 Tbsp) to the saucepan. Stir everything together thoroughly until well incorporated. You can adjust the sugar quantity to your preference.

Step 5
Place the saucepan over low heat. Continuously stir the mixture with a spatula or ladle to prevent it from sticking to the bottom and burning. As it heats up, it will start to thicken. Keep stirring until it reaches a consistency similar to thick pudding or yogurt. Once it’s thick and creamy, remove it from the heat.

Step 6
Stir in the chopped almonds, black sesame seeds, and chopped pistachios into the warm okara mixture. Taste and adjust the sweetness or saltiness if needed, according to your preference.

Step 7
Pour the prepared okara ice cream mixture into a freezer-safe container with a lid. Place it in the freezer. For a creamier texture, remove the container every 1-2 hours for the first 4-6 hours and scrape down the frozen edges, mixing them into the center. Alternatively, freeze for 6-8 hours until solid, then process in a blender or food processor until smooth and creamy, like a soft-serve.

Step 8
