Wash the potatoes thoroughly, keeping the skin on. Place them in a pot, cover with water, and bring to a boil over high heat. Once boiling, reduce to medium heat and simmer for about 20-25 minutes, or until the potatoes are completely tender. You can check for doneness by piercing with a fork; it should go in easily.

While the potatoes are cooking, hard-boil the eggs in a separate pot. Boil for about 10-12 minutes for perfectly hard-boiled eggs. Once cooked, transfer the eggs to cold water to cool down, then peel them carefully.

While the potatoes are still warm, peel off the skins. Transfer the peeled potatoes to a large bowl and mash them using a fork or potato masher until smooth and creamy, ensuring there are no large lumps. It’s best to leave some texture rather than making it completely puréed.

Separate the cooked and cooled eggs into whites and yolks. Finely chop the egg whites and add them to the mashed potatoes. Set aside the egg yolks; they can be used for garnish later.

Add 2 tablespoons of mayonnaise and 2 tablespoons of softened cream cheese to the mashed potatoes and chopped egg whites. Mix everything well. The cream cheese adds extra smoothness and a richer flavor. Season with salt and pepper to taste, being careful not to oversalt. (You can add a pinch of sugar if you like.)

Now, for the presentation! Transfer the potato salad to a serving dish. For an elegant touch, you can use a sieve to crumble the reserved egg yolks over the top of the salad.
