  • 2 Potatoes (approx. 300g)
  • 1/2 Onion (approx. 100g)
  • 15g Unsalted Butter (1 Tbsp)
  • 150ml Water
  • 150ml Milk
  • 1 tsp Salt

Cooking Instructions

Step 1

Begin by preparing your ingredients. Peel the potatoes and cut them into large chunks. Peel and thinly slice or finely chop the onion. You’ll be using half an onion for this recipe.

Step 2

In a pot, add enough water (about 150ml) to cover the chopped potatoes. Bring to a boil over medium heat and cook for approximately 10 minutes, or until the potatoes are tender. You can test for doneness by piercing them with a fork; it should go in easily.

Step 3

While the potatoes are boiling, melt the unsalted butter (15g) in a separate pan or pot over low heat. Once the butter has melted, add the prepared onion and sauté gently for about 10 minutes, being careful not to burn it. Cook until the onion becomes translucent and releases its sweet aroma.

Step 4

Tip: The cooking time for the potatoes and the sautéing time for the onion are quite similar. Performing these steps simultaneously can help save you time.

Step 5

Once the potatoes are cooked and the onions are nicely sautéed, it’s time to blend them together. Add the sautéed onions and the milk (150ml) to the pot with the boiled potatoes. Using an immersion blender (often called a ‘devil’s whisk’ in Korean) will make it quick and easy to achieve a smooth consistency. If you don’t have an immersion blender, a regular blender or even mashing the ingredients in the pot will work.

Step 6

After blending all the ingredients until smooth, return the pot to low heat and bring it to a simmer. Once it begins to bubble, reduce the heat to very low and stir continuously to prevent sticking. Cook until the soup reaches your desired thickness. Season with salt (1 tsp) to taste. A pinch of black pepper can also be added if you like.

Step 7

Please note that as the potato soup cools, its consistency will naturally thicken, and its color will gradually change to a lovely ivory hue.

Step 8

The finished potato soup boasts an incredibly smooth texture and a wonderfully fragrant aroma. Serve it with crusty bread, perhaps toasted or fried, for an even more satisfying meal.
