The rich umami of mentaiko (spicy cod roe) blended with creamy mayonnaise creates an irresistible flavor that you won’t be able to stop dipping into!

Key Ingredients
  • 1 Mentaiko (Spicy Cod Roe, approx. 50g)
  • 1 Tbsp Mayonnaise (approx. 15ml)
  • 1 tsp Sugar (approx. 5g)
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare the mentaiko. Carefully remove the outer skin of the mentaiko. Then, use a spoon to gently scrape out and collect only the roe (egg sacs) from the inside. (Tip: Using a squeeze-tube mentaiko product will make this step even easier. About 2 tablespoons of the squeezed roe can be used.)

Step 2

Place the collected mentaiko roe into a small bowl. Add 1 tablespoon of mayonnaise for a smooth and creamy texture.

Step 3

Add 1 teaspoon of sugar to bring out a subtle sweetness and a pinch of black pepper for added aroma. Mix everything thoroughly with a spoon or whisk until well combined. Your delicious Mentaiko Mayonnaise sauce is now ready!
