Ingredients

  • 2 medium potatoes
  • 1/2 medium onion
  • 2 cups (400ml) milk, plus more for desired consistency
  • 1/2 Tbsp butter (approx. 7g)
  • Pinch of salt
  • Pinch of black pepper

Peel the skin off the 2 potatoes and cut them in half to speed up cooking. Place them in a pot of water and boil until they are tender. You’ll know they’re ready when a fork easily pierces through them.

In a separate pot, melt 1/2 Tbsp of butter over medium-low heat. Once melted, add the 1/2 onion and sauté for about 3-5 minutes until the onion becomes translucent and soft, releasing its aroma. (Using a spoon for measurement is convenient).

Add the boiled potatoes to the pot with the sautéed onions. Stir them together for a moment to warm them up.

Pour in 2 cups (400ml) of milk. Ensure the potatoes and onions are submerged in the milk, preparing them to cook together.

Using an immersion blender, blend the ingredients in the pot until smooth. Continue blending until everything is well combined and creamy. If you don’t have an immersion blender, carefully transfer the mixture to a regular blender and blend until smooth. This step is key to achieving a silky texture.

Return the blended soup to low heat. Stir continuously with a spatula or ladle to prevent sticking to the bottom of the pot. Once the soup begins to simmer gently, reduce the heat further.

Check the soup’s consistency. If it seems too thick, gradually add more milk while stirring until you reach your desired thickness. Aim for a smooth, creamy texture.
