Risotto Ingredients

  • Cocktail shrimp (thawed) – desired amount
  • Bell pepper (diced) – desired amount
  • Green pepper (diced) – desired amount
  • Minced garlic – a little (approx. 1/2 Tbsp)
  • Milk (adjust to consistency) – generously
  • Slice cheese – 1 slice

Cooking Instructions

First, heat some oil in a pan over medium-low heat. Add the diced bell pepper, green pepper, and minced garlic (which were stored frozen) and sauté until fragrant. As the vegetables start to turn translucent, the wonderful base aroma for the risotto will begin to develop.

Place the frozen cocktail shrimp in a bowl of water to thaw. Once thawed, gently pat them dry and add them to the pan with the sautéed vegetables. Cook together until the shrimp turn pink, indicating they are cooked through.

Once the shrimp and vegetables are nicely sautéed, it’s time to add the milk. Pour in enough milk to generously cover the ingredients and bring to a simmer over medium heat. Let it gently cook and reduce, allowing the creamy flavor to infuse. Stir occasionally to prevent sticking.
