Rich Soy Milk Base

  • 600cc Regular Soy Milk (1 carton)
  • 4 fresh egg yolks
  • 70g granulated sugar (adjust to taste)
  • 12g sheet gelatin (approx. 6 sheets)

First, prepare 4 fresh egg yolks in a clean bowl. The yolks play a crucial role in adding creaminess and a rich, nutty flavor to the pudding.

Add 70g of granulated sugar to the prepared egg yolks. The amount of sugar can be adjusted based on the sweetness of the soy milk and your personal preference. Starting with less sugar and adding syrup later is also a great option.

Using a whisk or spatula, gently mix the egg yolks and sugar until no lumps remain. It’s best to stir until the sugar granules are somewhat dissolved, the yolks turn a pale yellow, and the mixture slightly thickens.

Pour 600cc (about 3 cups) of regular soy milk into a saucepan and heat it to approximately 75°C (167°F). It’s important to heat it slowly over medium-low heat to prevent boiling over; it should feel warm to the touch. Be careful not to overheat, as this can cook the eggs.

Slowly pour the warmed soy milk into the bowl with the egg yolk and sugar mixture, stirring constantly. Adding the soy milk gradually while whisking quickly helps prevent the eggs from scrambling and creates a smooth emulsion. Once the soy milk and yolks are well combined, add 6 sheets (12g) of sheet gelatin that have been softened in cold water and stir until the gelatin is completely dissolved. Ensuring the gelatin is fully melted without clumps is key.
