Ingredients- 1 can Spam (200g)
- 1 mini pumpkin
- 100g onion
- 90g carrot
- 110g solid curry roux (mild or spicy)
- 1 Tbsp olive oil
- 600ml water

Step 1
Wash the mini pumpkin thoroughly, pat it dry, and microwave it for 1 minute. This step makes it much easier to scoop out the seeds and peel the skin. Cut the pumpkin in half, scoop out the seeds with a spoon, peel the skin, and then cut it into bite-sized pieces. Thinly slice the onion and cut the carrot into approximately 1cm cubes. Cut the Spam into similar-sized pieces. (Tip: Pumpkin skin is nutritious; you can peel it thinly and cook it along with the flesh for added benefits.)
Step 2
Heat 1 tablespoon of olive oil in a pan over medium heat. Add the sliced onion and sauté until it becomes translucent. Sautéing the onions well will bring out their natural sweetness and deepen the curry’s flavor.
Step 3
Once the onions are translucent, add the prepared mini pumpkin, carrot, and Spam to the pan. Stir-fry them together lightly until the ingredients are slightly browned. Pre-sautéing the ingredients adds texture and a richer, nutty flavor.
Step 4
Pour 600ml of water into the pan and bring it to a boil. Cover the pot with a lid and simmer over medium heat for about 10 minutes, allowing the carrots and pumpkin to soften. This process extracts the natural sweetness from the vegetables, making the curry even more delicious.
Step 5
After the vegetables are tender, reduce the heat to low and add the solid curry roux. Stir continuously with a spatula or ladle to dissolve the curry blocks completely, ensuring no lumps form. (Tip: Simmering the curry gently prevents a powdery texture and results in a smoother consistency.)

Continue to simmer, stirring occasionally, until the curry reaches a thick, gravy-like consistency. To serve, place a serving of hot rice in a bowl, ladle the pumpkin Spam curry generously over it, top with pan-fried Spam slices, and sprinkle some sesame seeds over the rice.
