A recipe for a rich and savory milk curry featuring Chef Baek Jong-won’s secret techniques. Its mild flavor is perfect for children, making it an enjoyable meal for the whole family.
Essential Ingredients- 1 packet of store-bought curry powder (any brand is fine)
- 4 cups of milk (approx. 800ml)
- 1 medium potato
- 1 medium onion
- Carrot (to taste)
Cooking Instructions
Step 1
First, prepare the vegetables for the curry: potato, onion, and carrot. Dice them into small, bite-sized pieces. Cutting them smaller than usual helps them cook faster and prevents picky eaters from easily picking them out. (Tip: You can also add finely chopped pork at this stage for extra flavor. However, we’re using sausages today, so it’s omitted.)
Step 2
Heat a pan over medium heat with a generous amount of cooking oil. Add the diced onion, carrot, and potato and stir-fry until they become slightly translucent and fragrant. This step helps bring out the natural sweetness of the vegetables.
Step 3
Once the onions and potatoes start to turn translucent, add 1 tablespoon of chili powder and stir-fry with the vegetables for another minute. (Tip: Omit or reduce the chili powder if making for children. Feel free to adjust the amount to your preference if you enjoy a spicier curry. Stir-frying the chili powder here enhances the curry’s overall depth of flavor.)
Step 4
As you continue stir-frying, the mixture will start to look like a delicious vegetable stir-fry. Keep cooking for a little longer. The vegetables will become coated in oil, making them even more tender.
Step 5
Now, pour in the main liquid: 4 cups of milk (approximately 800ml). Simmer over medium heat, rather than high heat, until the potatoes are completely tender. You can check by piercing them with a fork; they should be very soft.
Step 6
Once the potatoes are fully cooked, add the entire packet of curry powder to the pot. Stir thoroughly with a spatula or ladle to ensure the curry powder dissolves completely and mixes evenly with the milk sauce, preventing lumps.
Step 7
After the curry powder has fully dissolved and the sauce has thickened, reduce the heat to low and simmer for another 2-3 minutes to finish. Stir occasionally to prevent the curry from sticking to the bottom of the pot as it simmers.
Step 8
(Optional) If using sausages, prepare large, whole sausages. Cut them in half and pan-fry until golden brown. Placing these grilled sausages on top of the curry makes for an even more appealing and satisfying meal.
