Creamy Chicken Gnocchi

I found some potatoes rolling around in my fridge and decided to make some homemade gnocchi instead of sujebi. It turned out surprisingly easy and delicious! This recipe uses standard paper cups (200ml) for measurement.

Gnocchi Dough Ingredients

  • 2 medium potatoes
  • 1 egg
  • 1/2 cup all-purpose flour (paper cup measure, approx. 60g)
  • Extra flour for dusting

Cooking Instructions

Steam or boil the washed potatoes until tender. They should be easily pierced with a fork.

While still warm, peel the cooked potatoes and mash them thoroughly with a fork or potato masher until smooth. Ensure there are no lumps.

Add the egg to the mashed potatoes and mix well with the fork, mashing everything together until combined.

Add the 1/2 cup of flour and mix with a spatula or your hands until no dry flour remains. The dough might seem sticky at first, which is okay.

Once the dough starts to come together, put on disposable gloves and knead it into a cohesive ball. If it’s too sticky, gradually add a little more flour until it’s soft but doesn’t stick excessively to your hands.

Generously dust your work surface with flour. Roll out the dough into a log shape, about 1.5-2cm thick, and cut it into your desired gnocchi size.

Lightly dust each cut piece of dough with flour to prevent them from sticking to each other.

Dust a fork generously with flour as well. This will help prevent the dough from sticking to the fork when shaping.

Place a dough piece onto the floured fork. Use your finger to press down on the dough and roll it forward along the tines of the fork to create the classic gnocchi ridges.

Gently lift the dough, and you’ll have a gnocchi with ridges! (Alternatively, you can press the dough onto the fork and then roll it down the tines with your thumb for a similar effect. Choose whichever method is easier for you!)

Place the shaped gnocchi on a plate or tray dusted with flour, ensuring they don’t touch each other.

Melt the 50g of butter in a wide pan over medium-low heat. Add the diced carrot and sauté until tender.

Add the bite-sized pieces of chicken thigh to the pan and cook along with the carrots until the chicken is lightly browned on the outside.

Stir occasionally to coat the chicken and carrots evenly with the melted butter, which will enhance the flavor.

Pour in the 1/2 cup of heavy cream and mix well. The sauce will begin to thicken slightly.

At this stage, it’s ready to serve as baby-friendly creamy chicken gnocchi. It’s naturally seasoned and safe for little ones.

For the adult version, add the 2 slices of cheddar cheese and 1 tbsp of chicken stock to the pan. Once the cheese is melted and the sauce is well combined, add the homemade gnocchi. Cook until the gnocchi float to the surface, about 2-3 minutes. Once cooked, your delicious creamy chicken gnocchi is ready to enjoy!
