Main Ingredients

  • 4-5 medium potatoes
  • 3 eggs
  • 1/4 carrot
  • 1/4 cucumber
  • 1/4 onion
  • 3 Tbsp corn kernels

Dressing Ingredients

  • 4 Tbsp cream cheese
  • A pinch of black pepper
  • 1 tsp vinegar
  • 1 Tbsp sugar
  • 2 Tbsp mustard sauce

Peel the potatoes thoroughly. In a pot of boiling water with 1/2 Tbsp salt, add the potatoes and boil for about 10 minutes until tender. (They are ready when a fork can easily pierce them.) Hard-boil the eggs similarly.

Finely dice 1/4 carrot, 1/4 onion, and 1/4 cucumber. Sprinkle 1/3 Tbsp salt over the diced vegetables and let them sit for about 10 minutes to draw out moisture. (This helps retain their crispness and prevents the salad from becoming watery.)

Transfer the boiled potatoes to a bowl while they are still hot. Mash them using a fork or potato masher until smooth and lump-free. Mashing while warm ensures a smoother consistency.

To the mashed potatoes, add the drained hard-boiled egg whites (squeeze out excess water), the drained diced vegetables, and the dressing ingredients: 4 Tbsp cream cheese, 1 tsp vinegar, 1 Tbsp sugar, and 2 Tbsp mustard sauce. Mix everything together thoroughly until well combined. Ensure all ingredients are smoothly incorporated.
