Simple and Healthy Potato Salad
This is a delightful potato salad featuring the perfect harmony of tender potatoes and crisp apples. It’s a simple yet delicious recipe that’s great as a light meal, a sandwich filling, or a tasty side dish.
Main Ingredients- 2 medium potatoes
- 1/4 small apple
Dressing Ingredients- 1/2 tsp salt
- 1 tsp sugar
- 3 Tbsp mayonnaise or plain yogurt

Cooking Instructions
Step 1
First, peel the potatoes thoroughly and dice them into uniform cubes of about 2 cm. Dicing them evenly ensures they cook at the same rate.
Step 2
In a pot, combine 500cc of water with 1/2 tsp of salt and 1 tsp of sugar, and stir until dissolved. Boiling the potatoes in this seasoned water will infuse them with flavor, making them less bland.
Step 3
Add the diced potatoes to the sugar and salt water, and simmer over medium heat for about 5-10 minutes until tender. They should be soft enough to be easily pierced with a fork. Be careful not to overcook them, as they might become too mushy when mashed.
Step 4
Drain the well-cooked potatoes in a colander. While still warm, mash them with a fork or masher until smooth and lump-free. Add 3 Tbsp of mayonnaise (or plain yogurt) and the finely diced apple (peeled beforehand). Mix everything together gently until well combined. Your delicious potato salad is ready!
