Place the cubed potatoes and sliced onions into a thick-bottomed pot. Pour in 800ml of water or vegetable broth. (If you don’t have broth, you can use common seasonings like Dashida or Mat-seonsaeng, but anchovy-flavored ones are not recommended as they can alter the soup’s flavor profile.)

Once the water begins to boil, immediately reduce the heat to the lowest setting. Do not cover the pot completely; leave the lid slightly ajar (partially covered) to allow steam to escape. Simmer gently for about 40-50 minutes. This slow cooking process allows the potatoes and onions to become tender and their natural sweetness to develop.

This is what the soup looks like after simmering for 40 minutes. Check if the potatoes are completely cooked by piercing them with a fork; they should break apart easily.

If you don’t have an immersion blender, a regular blender can also be used. When using a regular blender, be cautious not to overfill it with hot soup and blend in batches.
