Soup Base Ingredients- 1 medium potato

Cooking Instructions
Step 1
First, gather all the ingredients needed to make your pea soup. You’ll need 1 potato, 1/2 onion, 1 cup of fresh or frozen peas, and 400ml of milk. Also prepare 0.3 Tbsp of salt and a pinch of black pepper for seasoning, and optionally, 1 Tbsp of grated Parmesan cheese for an extra flavor boost.
Step 2
Let’s briefly talk about peas, the star of this recipe! We’ll be using 1 cup of peas and 400ml of milk to create a wonderfully smooth soup. I’ve heard that peas can also be used to make a noodle dish, and I’m very curious about its taste! Finding fresh peas can sometimes be a bit challenging, but this soup tastes delicious even when made with frozen peas.
Step 3
Now it’s time to prepare the vegetables. Peel the potato and onion and wash them thoroughly. Then, dice them into bite-sized pieces (about 1.5-2 cm cubes) to make them easy to cook and blend later.

Heat 1 Tbsp of olive oil in a pot over medium heat. Add the diced potato and onion. Sprinkle in the 0.3 Tbsp of salt and a pinch of black pepper. Sauté for about 3 minutes until the vegetables become slightly tender and translucent. This sautéing step helps to bring out the natural sweetness of the vegetables and deepen their flavor.
Step 5
Once the potatoes and onions are nicely sautéed, add 300ml of milk and the prepared peas to the pot. Stir everything together and bring it to a simmer over medium heat for another 3 minutes, allowing the ingredients to meld. After cooking, turn off the heat and let the pot cool slightly for a few minutes before blending. This makes it safer to handle.
Step 6
Carefully transfer the slightly cooled soup mixture to a blender. Secure the lid tightly and blend until the mixture is smooth and creamy. You want a completely lump-free consistency. If you don’t have a blender, an immersion blender works perfectly fine.
Step 7
Pour the blended soup back into a clean pot or saucepan over medium-low heat. Add the remaining 100ml of milk to adjust the consistency to your liking. Simmer for another 3 minutes, stirring occasionally to prevent sticking to the bottom. It’s best enjoyed fresh from the pot!
Step 8
Ladle the warm, creamy pea soup into serving bowls. If desired, sprinkle 1 Tbsp of grated Parmesan cheese over the top for an extra layer of flavor. Don’t worry if you don’t have Parmesan; it’s delicious without it too. A garnish of fresh herbs can also be a lovely addition.
