Creamy Homemade Potato Soup

Ingredients
  • 1 medium potato (approx. 200-250g)
  • 1/2 medium onion (approx. 50-70g)
  • 20g butter
  • 1 tbsp grated Parmesan cheese
  • 200mL milk
  • 1/3 tbsp chicken stock (or a pinch of chicken powder)
  • Salt to taste
  • Black pepper to taste
  • 400mL water

Cooking Instructions

Step 1

Prepare your ingredients. Wash the potato and onion thoroughly. Peel and chop the potato into roughly 2-3cm pieces. Chop the onion to a similar size. Since everything will be blended later, precise cuts are not essential.

Step 2

Melt the butter in a pot over medium heat. Ensure the butter doesn’t burn and melts gently.

Step 3

Once the butter has melted, add the chopped onion to the pot. Sprinkle in a pinch of salt and a dash of pepper, then sauté until the onion becomes translucent and tender. Sautéing the onion well helps to release its natural sweetness, enhancing the soup’s flavor.

Step 4

When the onion starts to soften and turn translucent, add the chopped potato to the pot. Stir and cook for another 1-2 minutes. Lightly sautéing the potatoes will deepen their nutty flavor in the soup.

Step 5

Once the ingredients are lightly sautéed, pour in 400mL of water. Ensure the water covers the potatoes and onions.

Step 6

Cover the pot and let it simmer over medium heat for about 20 minutes, or until the potatoes are very tender and easily mashed with a fork. Stir occasionally to prevent sticking to the bottom of the pot.

Step 7

When the potatoes are fully cooked and tender, carefully pour in 200mL of milk. After adding the milk, it’s best to maintain a medium-low heat to prevent scorching.

Step 8

Use an immersion blender to purée the soup until it’s completely smooth and creamy. If you don’t have an immersion blender, you can carefully transfer the mixture to a regular blender (be cautious with hot liquids). Blend until there are no lumps. The smoother the texture, the more luxurious the soup will be.

Step 9

Stir in 1 tablespoon of grated Parmesan cheese for a nutty, savory depth and 1/3 tablespoon of chicken stock for added umami. Mix well until fully incorporated.

Step 10

Finally, simmer the soup for about 5 more minutes. Taste and adjust the seasoning with salt and pepper as needed. Your rich, creamy, and delicious potato soup is now ready to be enjoyed! Serve warm.
