Main Ingredients

  • 450g King Oyster Mushrooms
  • 1 cup Perilla Seed Powder (about 100g)
  • 1/2 stalk Scallion, thinly sliced
  • 1 Tbsp Minced Garlic
  • 1/2 Tbsp Fish Sauce (or soy sauce)
  • 1/4 tsp Black Pepper
  • 1 tsp Sesame Oil

Broth Ingredients

  • 60g Daikon Radish, cubed
  • 1 stalk Scallion (with root, cleaned)
  • 1/2 Onion (with peel)
  • 20g Roasted Anchovies (gutted)
  • 1 sheet Dried Kelp (10x10cm)
  • 1.4L Water

Cooking Instructions

Step 1

Let’s start by making a deep and refreshing broth. In a pot, combine 1.4L of water, daikon radish, scallion (with root), and onion (with peel). Bring to a boil over high heat and simmer for 10 minutes. (Do not add the kelp and anchovies yet.)

Step 1

Step 2

After 10 minutes, add the cleaned, roasted anchovies and continue to boil for another 5 minutes. Adding anchovies will deepen the flavor of the broth.

Step 2

Step 3

Now, turn off the heat and add the dried kelp. To avoid a bitter taste, let the kelp steep in the hot water for 10 minutes without boiling. This allows the kelp to naturally infuse its flavor.

Step 3

Step 4

Once the broth has sufficiently steeped, strain it through a fine-mesh sieve, discarding all the solids. This will give you a clear and flavorful broth. Your delicious broth is now ready!

Step 4

Step 5

Next, prepare the king oyster mushrooms. Bring a pot of water to a boil and add 1 teaspoon of salt. Add the mushrooms and blanch them over high heat for 1 minute and 30 seconds. This helps remove any earthy smell and enhances their chewy texture.

Step 5

Step 6

Immediately after blanching, rinse the mushrooms thoroughly under cold running water. Rinsing in cold water will make the mushrooms firmer and more pleasingly chewy.

Step 6

Step 7

Gently squeeze out as much water as possible from the rinsed mushrooms using your hands. Then, tear them into bite-sized pieces. Avoid tearing them too small, as larger pieces provide a better texture.

Step 7

Step 8

To the warm broth, add the torn king oyster mushrooms and a generous amount of perilla seed powder. Cover the pot and bring to a boil over high heat for 8 minutes. This allows the nutty flavor of the perilla seeds to infuse into the soup.

Step 8

Step 9

After 8 minutes, add the minced garlic and fish sauce (or soy sauce) to the soup. Reduce the heat to medium and simmer for another 11 minutes. Simmering gently allows the mushroom flavors to meld beautifully and the seasonings to integrate well.

Step 9

Step 10

Finally, add the sliced scallions, sesame oil, and black pepper. Give it one last brief simmer, and your delicious King Oyster Mushroom & Perilla Soup is complete! Enjoy this warm, nutty, and comforting bowl.
