Main Ingredients

  • 4 medium potatoes
  • 1/4 carrot
  • 1 piece imitation crab meat (or surimi stick)
  • 3 tablespoons corn kernels
  • 2-3 gherkin pickles

Dressing Ingredients

  • 5 tablespoons mayonnaise
  • 1 tablespoon whole grain mustard
  • 1/2 tablespoon sugar
  • 2-3 pinches of salt (approx. 1/4 teaspoon)
  • Pinch of black pepper

For Boiling Potatoes

  • 1/2 teaspoon salt

Cooking Instructions

Step 1

Thoroughly wash the potatoes and peel them. If the potatoes are large, cut them in half or quarters to reduce boiling time.

Step 1

Step 2

In a pot, add enough water to cover the potatoes, along with 1/2 teaspoon of salt. Once the water boils, add the potatoes, cover with a lid, and boil over medium heat for about 20 minutes until tender. They are ready when a fork can easily pierce them.

Step 2

Step 3

Immediately drain the boiled potatoes in a colander to remove all the hot water. It’s best to mash them while they are still warm using a fork until smooth and lump-free.

Step 3

Step 4

Dicing the carrot, pickles, and imitation crab meat adds crucial texture to the potato salad. Finely mince all these ingredients. Chopping them into roughly the same size will make the salad taste even better.

Step 4

Step 5

Drain the corn kernels in a sieve. Gently press them with the back of a spoon to remove as much moisture as possible. This step is important to prevent the salad from becoming watery and to maintain a good consistency.

Step 5

Step 6

To the mashed potatoes, add all the prepared diced ingredients: carrot, pickles, imitation crab meat, and corn kernels. Then, add all the dressing ingredients: 5 tablespoons mayonnaise, 1 tablespoon whole grain mustard, 1/2 tablespoon sugar, 2-3 pinches of salt, and a pinch of black pepper.

Step 6

Step 7

Using a spoon, gently mix all the ingredients together until the mashed potatoes and dressing are evenly combined. Be careful not to overmix, as this can make the potatoes mushy. Taste the salad and adjust seasoning with more salt or mayonnaise if needed. Your delicious mashed potato salad is now complete!
