Ingredients- 160g Soft Cake Flour
- 110g Sugar
- 2 Large Eggs
- 1g Salt
- 100g Animal-Based Whipping Cream
- 6g Baking Powder
- 40g Melted Butter
- 5g Extra Butter for Greasing the Pan
Cooking Instructions
Step 1
In a clean bowl, crack the 2 large eggs and lightly whisk them. Then, add 110g of sugar and 1g of salt, and mix until the sugar is dissolved. It’s best to mix with a spatula rather than a whisk to avoid creating too much foam.
Step 2
Add 100g of animal-based whipping cream to the egg mixture. Gently stir it in, being careful not to create excessive foam. Ensure the cream is well incorporated into the egg mixture.
Step 3
Once the cream and egg mixture are combined, add 40g of melted butter. Mix quickly to prevent the batter from separating. If your butter has cooled down, it’s a good idea to warm it slightly before adding.
Step 4
Sift 160g of soft cake flour and 6g of baking powder into the bowl. Gently fold them into the wet ingredients using a spatula until just combined and no dry flour streaks remain. Be careful not to overmix, as this can make the cake tough.
Step 5
Grease your muffin tins or cake pan thoroughly with the extra 5g of butter. This step ensures that your cakes release smoothly after baking. You can also line them with parchment paper.
Step 6
Pour the prepared batter into the prepared molds, filling them only about 50-60% full. This leaves enough room for the cakes to rise properly. Overfilling can cause them to spill over.
Step 7
Bake in a preheated oven at 180°C (350°F) for approximately 22 minutes. To check for doneness, insert a skewer into the center; it should come out clean. Oven temperatures can vary, so check the cakes around the 20-minute mark and adjust the baking time and temperature as needed.
