Pasta Ingredients- 4 cloves garlic, thinly sliced
- 1 serving spaghetti (approx. 100g)
- 2 fresh button mushrooms, washed, halved, and thinly sliced
- 1/4 onion, finely chopped
- 4 frozen cocktail shrimp, thawed and rinsed
Sauce and Seasoning- 85g plain yogurt (unsweetened)
- 85g milk
- 90g cream cheese
- 1 Tbsp coarse salt (for boiling pasta)
- 1/2 tsp fine salt (for seasoning, adjust to taste)
- Pinch of whole peppercorns, freshly ground
- 2 Tbsp olive oil (for coating pasta)
- 1 Tbsp grapeseed oil (for sautéing)
- Pinch of dried parsley (for garnish)

Cooking Instructions
Step 1
Begin by preparing your pasta ingredients. Peel and thinly slice the garlic. Wash the fresh button mushrooms thoroughly, halve them, and then slice them thinly. Thaw the frozen cocktail shrimp under cold running water, then rinse and drain them well.

Bring a large pot of water to a rolling boil. Add 1 Tbsp of coarse salt. Once boiling, carefully add the spaghetti, spreading it out to prevent clumping. Stir gently at first to separate the strands. Continue to stir occasionally as the pasta cooks.
Step 3
Cook the spaghetti for about 7 minutes, or until ‘al dente’ – tender but still with a slight bite. It’s important not to overcook it, as the pasta will continue to cook from residual heat. Aim for the center of the pasta to still have a slight resistance.

Drain the cooked spaghetti well. While still hot, immediately toss it with 2 Tbsp of olive oil. This prevents the noodles from sticking together and helps the sauce adhere better.

While the pasta is boiling, heat 1 Tbsp of grapeseed oil in a pan over low heat. Add the sliced garlic and sauté until fragrant and lightly golden, being careful not to burn it.

Add the chopped onion and sliced mushrooms to the pan with the garlic. Increase the heat to medium and sauté until the onion becomes translucent and the mushrooms are tender. This process brings out the natural sweetness of the vegetables.

Freshly grind a pinch of whole peppercorns using a mortar and pestle. Freshly ground pepper offers a more vibrant aroma and flavor compared to pre-ground pepper, significantly enhancing the pasta’s taste.

Now, let’s prepare the creamy sauce. In a bowl, combine 85g of plain yogurt, 85g of milk, and 90g of cream cheese. Whisk them together until smooth and well combined. Using softened cream cheese (left at room temperature for a bit) will make this step easier.

Add the prepared cream sauce and the thawed cocktail shrimp to the pan with the sautéed vegetables. Cook over low heat, stirring gently until the sauce begins to simmer and thicken slightly. Stir in the freshly ground black pepper.

Once the sauce has reached a desirable consistency, add the olive oil-coated spaghetti to the pan. Toss everything together gently to ensure the pasta is evenly coated with the creamy sauce. Continue to cook and stir for about 1-2 minutes to allow the pasta to absorb the flavors.

Season the pasta with 1/2 tsp of fine salt, or to your taste. It’s best to season at the end so you can adjust it perfectly. Taste and add more salt if needed, a little at a time.
