Creamy Peanut Butter Coleslaw
Simple & Delicious Coleslaw Made with Peanut Butter
Elevate your coleslaw game with a nutty twist! This recipe features a delightful peanut butter dressing, offering a unique and savory flavor profile that’s incredibly easy to make. Perfect as a side dish or a vibrant addition to sandwiches.
Main Ingredients- 100g Cabbage, thinly shredded (about 1/4 medium head)
- 1/4 Bell Pepper (any color, e.g., red, yellow), thinly sliced
Cooking Instructions
Step 1
Start by thoroughly washing the cabbage. Pat it dry and then slice it thinly into shreds, about 0.5cm thick. Aim for consistent shreds that offer a pleasant bite.
Step 2
Wash the bell pepper, remove the seeds, and then slice it into thin, matchstick-like strips, similar in thickness to the cabbage. Using different colored peppers will add visual appeal.
Step 3
In a medium bowl, combine all the dressing ingredients: olive oil, soy sauce, sugar, minced garlic, and creamy peanut butter. Whisk vigorously with a fork or a small whisk until smooth and well-emulsified. Ensure there are no lumps of peanut butter for a silky dressing.
Step 4
Add the shredded cabbage and sliced bell pepper to the bowl with the dressing. Gently toss everything together using tongs or a spoon, ensuring all the vegetables are evenly coated with the peanut butter dressing. Be careful not to overmix, which can make the vegetables mushy. Serve immediately or chill in the refrigerator for about 15-30 minutes for a cooler, more refreshing taste.
