Ingredients

  • 4 medium potatoes
  • 2 fresh eggs
  • 1 teaspoon salt (for boiling potatoes)
  • 1/2 small chili pepper, finely minced
  • 1/2 small red bell pepper, seeded and finely minced
  • 1/4 carrot, finely minced
  • 1 tablespoon mayonnaise
  • 1 tablespoon finely chopped green onion (scallion) or the white part of a leek

Cooking Instructions

Step 1

First, place the 2 eggs in a pot and cover them with water. Add a pinch of salt and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 15 minutes for hard-boiled eggs. While the eggs are cooking, wash the 4 potatoes, place them in another pot without peeling, and cover with enough water to submerge them. Boil until the potatoes are tender, about 20-30 minutes. (They are done when a fork can easily pierce them). While the potatoes and eggs are boiling, finely mince the prepared vegetables (chili pepper, red bell pepper, carrot, green onion). The finer you mince the vegetables, the smoother the salad will be.

Vegetable mincing complete! These finely chopped vegetables will add wonderful flavor to your salad. Feel free to adjust the quantity of each vegetable to your personal preference. If you enjoy a bit of spice, increase the chili pepper; for added color, use more red bell pepper.

Once the eggs are cooked, immediately run them under cold water to cool, then peel them. Coarsely mash the egg whites with a fork or a potato masher, or chop them finely. Peel the boiled potatoes while they are still warm. Place them in a bowl and mash them smoothly using a fork or potato masher. It’s okay if there are a few small lumps remaining. Add 1 teaspoon of salt to the mashed potatoes and mix well to season them.

To the mashed potatoes and mashed egg whites, add all the minced chili pepper, red bell pepper, carrot, and green onion. Next, stir in 1 tablespoon of mayonnaise. Mayonnaise helps bind the potatoes and vegetables together. Mix everything thoroughly to ensure no clumps.

Finally, add the egg yolks. You can either mash them through a sieve or crumble them with your fingers and sprinkle them over the salad. The egg yolks contribute a rich, creamy flavor and an appealing look. Gently toss everything together until well combined, and your delicious potato egg salad is ready!
