Hello everyone! On hot summer days, when you’re craving something light and refreshing, I have a special noodle dish for you: ‘Jatguksu’ or Pine Nut Noodles. If the beany taste of traditional Korean Soybean Noodles (Kongguksu) isn’t your favorite, you’ll love this! Made by blending pine nuts, it’s incredibly rich and nutty without any bean odor. Main Ingredients- 150g Pine nuts (for a rich, nutty flavor)
- 2 1/2 cups Chicken broth (store-bought or homemade broth works perfectly)
- 1 serving Semen noodles (adjust quantity to your preference)
- 1/3 Cucumber (adds a refreshing crunch and freshness)
- A pinch of salt (to season and enhance the pine nut flavor)
Cooking Instructions
Step 1
First, wash the cucumber thoroughly. Then, julienne it into thin, fine strips. These julienned cucumbers will be used as a garnish on top of the noodles later, adding visual appeal and a refreshing crispness.
Step 2
In a blender, combine the 150g of nutty pine nuts, 2 and a half cups of cool chicken broth, and a pinch of salt. Now, blend until everything is completely smooth and creamy. The key to a silky smooth pine nut soup is thorough blending. For an even smoother texture, strain the blended mixture through a fine-mesh sieve.
Step 3
Bring a large pot of water to a rolling boil. Add a pinch of salt to the boiling water to prevent the noodles from sticking together. Add the 1 serving of somen noodles and cook them until perfectly done. Refer to the package instructions for cooking time, but be careful not to overcook them – they should be al dente. Once cooked, rinse the somen noodles under cold water to remove excess starch and drain them well.
Step 4
Now, arrange the drained somen noodles attractively in a serving bowl. Generously ladle the cool and creamy pine nut broth over the noodles. Finally, top with the thinly julienned cucumber.
