Creamy Silken Tofu Salad with Peanut Butter Dressing
How to Make Silken Tofu Salad with Peanut Butter Dressing
I’ve been experimenting with many recipes using peanut butter lately. This one is a delightful way to enjoy silken tofu with a rich, savory peanut butter dressing.
Salad Ingredients
- 1 pack silken tofu (approx. 300g)
- A handful of mixed nuts, roughly chopped
Peanut Butter Dressing
- 2 Tbsp creamy peanut butter
- 1/2 Tbsp soy sauce
- 1 Tbsp allulose (or corn syrup)
- 1 Tbsp lemon juice
- 1 Tbsp apple cider vinegar
- 1 Tbsp toasted sesame seeds, ground
- 2 Tbsp creamy peanut butter
- 1/2 Tbsp soy sauce
- 1 Tbsp allulose (or corn syrup)
- 1 Tbsp lemon juice
- 1 Tbsp apple cider vinegar
- 1 Tbsp toasted sesame seeds, ground
Cooking Instructions
Step 1
Carefully drain the water from the silken tofu packaging. Gently place the block of tofu onto a serving plate. Handle it with care to prevent it from breaking apart.
Step 2
Using a knife, cut the silken tofu into bite-sized pieces, about 2-3 cm cubes. Avoid cutting them too small, as they can crumble easily.
Step 3
In a small bowl, combine all the dressing ingredients: 2 Tbsp of creamy peanut butter, 1/2 Tbsp of soy sauce, 1 Tbsp of allulose (or corn syrup) for sweetness, 1 Tbsp of fresh lemon juice, 1 Tbsp of apple cider vinegar, and 1 Tbsp of ground toasted sesame seeds. Whisk everything together until smooth and well combined. Ensure the peanut butter is fully incorporated to create a creamy, emulsified dressing.
Step 4
Generously drizzle the prepared peanut butter dressing over the cut silken tofu. Finally, sprinkle the roughly chopped nuts over the top. This adds a wonderful texture and nutty flavor to the salad, making it even more delicious. Serve immediately for the best taste and texture!
