  • Fresh Soy Milk 100-150g (Recommended: freshly ground at a tofu shop or homemade)
  • Sesame Seeds, a pinch (for nutty aroma)
  • Pink Salt, a pinch (or regular salt, to taste)

Prepare the soy milk. I purchased a bottle of freshly ground soy milk from a local tofu shop. Unpasteurized, freshly made soy milk without preservatives can be stored in the refrigerator for 4-5 days. If you’re making it at home, soak soybeans, boil them, remove the skins, and blend in a mixer.

Grind the sesame seeds. Place the sesame seeds in a mortar and pestle and grind them about 60% of the way. You don’t want a fine powder; a slightly crushed texture will release more of its nutty flavor. If you have almonds, walnuts, or other nuts, you can grind them together with the sesame seeds for added richness.

Add the ground sesame seeds to the soy milk. Pour the soy milk into a glass or bowl. Sprinkle the ground sesame seeds on top. The fragrant aroma of freshly ground sesame will enhance the overall taste of the soy milk.
