Creamy & Spicy Rose Tteokbokki with Spicy Chicken & Creamy Enoki Mushrooms

Let’s make Rose Tteokbokki at home! Today, I’m also sharing a recipe for my current obsession, Spicy Chicken Enoki Mushrooms, to serve as a side dish. I also tried making Creamy Enoki Mushrooms, and having them both offered a delightful variety. You can even mix them together for a unique flavor combination! ^^

Rose Tteokbokki Ingredients

  • Tteokbokki rice cakes for 2 servings (approx. 300g)
  • 4 sheets of square fish cakes
  • Hard-boiled eggs (optional)
  • 1 Tbsp oyster sauce
  • 1 Tbsp soy sauce
  • 2 Tbsp gochujang (Korean chili paste)
  • 8 Tbsp heavy cream or whipping cream (table cream)
  • 1 Tbsp sugar (adjust to taste)
  • 5g bonito flake powder (or 1 Tbsp anchovy broth powder, Hondashi)

Spicy Chicken Enoki Ingredients

  • 1 whole enoki mushroom
  • Spicy chicken sauce (to taste, 2-3 Tbsp recommended)

Creamy Enoki Ingredients

  • 1 whole enoki mushroom
  • 3 Tbsp heavy cream or whipping cream (table cream)
  • 1/2 cup (100ml) milk
  • Pinch of salt

Cooking Instructions

Step 1

First, let’s prepare the side dishes: Spicy Chicken Enoki and Creamy Enoki. Trim the root end of the enoki mushrooms, then gently tear them into about three portions by hand.

Rinse the torn enoki mushrooms lightly under running water, then place them in a colander to drain completely. Ensuring they are dry is key for them not to clump and to cook perfectly.

Cut the square fish cakes into bite-sized pieces (triangles or squares). If your tteokbokki rice cakes are soft, use them as is. If they are hard, soak them in cold water for a short while.

Lightly oil a frying pan and add the torn enoki mushrooms. Generously drizzle with spicy chicken sauce to your liking and stir-fry. This creates the Spicy Chicken Enoki – no complicated steps needed, and it’s incredibly delicious!

Now, let’s make the Creamy Enoki. In a separate pan (or after wiping clean the pan used for the spicy enoki), add a little oil and sauté the enoki mushrooms. Pour in half a cup (100ml) of milk and 3 tablespoons of heavy cream (table cream), mixing well.

Simmer over medium-low heat, season lightly with salt, and cook until the sauce thickens slightly. This results in a rich and creamy Enoki mushroom dish.

Let’s get started on the Rose Tteokbokki! Lightly oil a frying pan and add the cut fish cakes. Sauté over low heat until they are slightly golden. Then, add 1 tablespoon of oyster sauce and 1 tablespoon of soy sauce, stir-frying briefly to release their aroma.

Don’t overcook the fish cakes. Immediately pour in 2 cups (400ml) of water. Next, add 5g of bonito flake powder (or 1 Tbsp anchovy broth powder or Hondashi) and stir to dissolve. This ingredient adds a wonderful depth of flavor to the Rose Tteokbokki.

Add 2 tablespoons of gochujang, the essential spice for tteokbokki, and stir well to ensure there are no lumps. This forms the base of the spicy flavor.

Now for the creamy element! Add 8 tablespoons of heavy cream (table cream) and stir again to combine all the ingredients smoothly.

To prevent the sauce from reducing too quickly and to adjust sweetness, add the sugar last. Stir in 1 tablespoon of brown sugar. (You can adjust the sweetness according to your preference.)

Add the rice cakes and don’t cook for too long. Simmer just until the rice cakes are tender and the sauce has slightly thickened. Transfer to a beautiful serving dish. The deep, creamy flavor of the rose sauce is truly exceptional! Feel free to serve it with your favorite additions like hot dogs, fried seaweed rolls, or hard-boiled eggs.
