Ingredients

  • Spinach, 1 paper cup (blanched and pureed)
  • Medium-sized onion, 1
  • Salami or bacon (choose according to preference)
  • Garlic cloves, 3
  • Mushrooms, a small amount (e.g., button, king oyster)

Sauce & Seasoning

  • Milk, 2 paper cups (400ml)
  • Butter, 1 piece (approx. 1-2 tbsp)
  • Sliced cheese, 1-2 slices (or Parmesan cheese powder)
  • Salt (for seasoning)
  • Pepper (a pinch)

Cooking Instructions

Step 1

Prepare all your ingredients thoroughly! Feel free to substitute salami or bacon with other processed meats you enjoy. For instance, chicken breast or shrimp would also be delicious additions.

Step 1

Step 2

Slice the garlic thinly. Chop the onion and mushrooms into small, bite-sized pieces. If using salami or bacon, cut them into similar sizes. Briefly blanch the spinach in boiling water, then rinse under cold water, squeeze out excess moisture, and puree in a blender until smooth. (Alternatively, you can finely chop it if you prefer.)

Step 2

Step 3

Fill a large pot with plenty of water, add 1 tablespoon of salt, and bring it to a rolling boil. This water will be used to cook the spaghetti.

Step 3

Step 4

While the water is boiling, let’s make the delicious cream sauce! Heat a skillet or pot with some cooking oil over medium heat. Once the oil is warm, add the sliced garlic and sauté, stirring constantly to prevent burning, until fragrant. This will create a flavorful garlic oil.

Step 4

Step 5

As the garlic releases its aroma, add the prepared salami (or bacon) and sauté until golden brown. Cook to bring out the salami’s distinctive flavor, then add a pinch of pepper to enhance the aroma.

Step 5

Step 6

Once the meat has rendered some fat, add the chopped onion and mushrooms to the pan and sauté alongside. Continue cooking until the onion becomes translucent and the mushrooms are slightly softened.

Step 6

Step 7

When the onions turn transparent, pour in the 2 cups of milk, the pureed spinach, and the cheese. Stir everything together until well combined. The cheese will melt, making the sauce smooth and rich.

Step 7

Step 8

Once the sauce begins to simmer gently, add the butter and stir until it’s completely melted. The butter will add a deeper layer of flavor. Taste the sauce and adjust with salt if needed. Your delicious cream sauce is now ready!

Step 8

Step 9

When the water is boiling vigorously, add the spaghetti and cook according to the package directions (usually 7-8 minutes), perhaps 1 minute less to achieve a perfectly al dente texture.

Step 9

Step 10

After checking that the pasta is cooked to your liking, drain it thoroughly in a colander. To prevent the noodles from sticking together, drizzle with 1-2 tablespoons of olive oil and toss gently to coat.

Step 10

Step 11

Plate the cooked spaghetti and generously ladle the warm cream sauce over it. Toss gently to combine. Your beautiful and delicious spinach cream pasta is complete! For an extra touch, garnish with parsley flakes or a sprinkle of Parmesan cheese.
