How to Make Creamy Sweet Pumpkin Risotto
A delightful sweet pumpkin cream risotto enhanced with the subtle nuttiness of soy milk, creating a deeply savory and comforting dish.
Ingredients- Rice 200g
- 1/4 Sweet pumpkin
- 1/4 Onion
- 60g Shiitake mushrooms
- 1 Tbsp minced garlic
- 1 Tbsp butter
- 1 Tbsp olive oil
- 1 cup Heavy cream
- 1 cup Soy milk
- 1/4 cup White wine
- 2 + 1/2 cups Water

Cooking Instructions
Step 1
Cut the sweet pumpkin in half, remove the seeds, steam until tender, then peel and mash thoroughly. You want a smooth puree.
Step 2
Rinse the rice under cold water to remove excess starch and drain it well.
Step 3
Remove the stems from the shiitake mushrooms and slice them thinly. Finely mince the onion and garlic.
Step 4
Prepare the heavy cream (which may have been frozen) and white wine. Soy milk can be used instead of regular milk for a richer, nuttier flavor. If you have leftover white wine from another meal, this is a great way to use it.
Step 5
In a pan, melt the butter with the olive oil over medium heat. Sauté the minced garlic and onion until softened and translucent. This builds a flavorful base.

Add the rinsed rice to the pan and stir constantly for about 2-3 minutes, until the grains become slightly translucent and appear toasted. This step is key for developing the risotto’s texture.

Pour in the water, mashed sweet pumpkin, sliced shiitake mushrooms, and white wine. Bring to a boil, then reduce the heat to medium-low. Stir frequently to prevent the rice from sticking to the bottom. Using broth instead of water will add more depth of flavor.

Once the rice is about halfway cooked and the mixture has thickened slightly, stir in the soy milk and heavy cream. Continue to cook, stirring occasionally, until the rice is al dente – tender but still with a slight bite.

When the risotto has reached your desired consistency and the rice is perfectly cooked, season with salt and pepper to taste. Serve immediately in warm bowls. Adjust seasoning as needed.
