Crisp and Aromatic Scallion Salad Recipe

This is a unique salad recipe featuring fresh and crisp scallions. It’s a fantastic way to enjoy scallions, which we usually use in cooked dishes, in a novel and refreshing way. The tangy dressing perfectly complements the mild sweetness of the scallions, making it an excellent side dish or a light meal. Experience a special flavor with simple ingredients.
Salad Ingredients- 3 fresh scallions
- 100g imitation crab meat (kani kama)
Cooking Instructions
Step 1
First, wash the scallions thoroughly. Trim off the root ends and cut both the white and green parts into 4-5 cm lengths, making them easy to eat. This size is perfect for a salad.
Step 2
In a pot, combine 150ml of water and 2 Tbsp of plum extract. Bring it to a boil over high heat. The plum extract helps to enhance the scallions’ natural sweetness and reduce any strong odors.
Step 3
Once the water is boiling vigorously, add the prepared scallions. Blanch them for about 5 minutes without covering the pot. This process softens the pungent flavor of the scallions while retaining their crisp texture. After blanching, rinse them under cold water and drain well.
Step 4
Gently shred the imitation crab meat using a fork or your fingers, following the natural grain. Shredding it into bite-sized pieces will provide a better texture when eaten.
Step 5
Now, let’s assemble the delicious salad. In a large bowl, combine the shredded imitation crab meat, the blanched and drained scallions, 3 Tbsp of olive oil, 1 Tbsp of balsamic vinegar, 1 Tbsp of fresh lemon juice, and 1 Tbsp of oligosaccharide for a touch of sweetness. Finally, add a pinch of black pepper. Gently toss everything together until all ingredients are well combined and evenly coated with the dressing. Be careful not to overmix. Serve immediately and enjoy this fresh, delightful salad!
