Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water. Place the rinsed bean sprouts in a pot and add about 1/2 cup of water, just enough to cover the sprouts. Add a pinch of salt (about 1/3 tsp) and cover the pot with a lid. Using a pot with some depth, cook on high heat for about 5 minutes. It’s crucial not to open the lid while cooking to maintain the crisp texture of the bean sprouts!
Step 2
After boiling for 5 minutes, immediately rinse the bean sprouts under cold running water to cool them down. This step helps keep the sprouts crisp and prevents them from becoming mushy.
Step 3
Drain the bean sprouts thoroughly after rinsing them in cold water. Let them sit in a colander to remove excess water. Avoid squeezing them tightly, as this can prevent the seasoning from being absorbed well.
Step 4
Add all the prepared seasoning ingredients (gochugaru, sesame oil, salt, sesame seeds) and the chopped scallions to the drained bean sprouts. Gently mix everything together with a light touch, like you’re dusting them, to ensure the seasoning is evenly distributed. Be careful not to mix too vigorously, as this can break the sprouts!
Step 5
Transfer the perfectly seasoned bean sprouts to a serving dish. Enjoy this simple yet delicious side dish, a perfect accompaniment to any meal. It’s especially wonderful with a bowl of warm rice!
