Main Ingredients- 3 fresh cucumbers
- 1/2 onion
- 1/3 crisp carrot
Sweet & Spicy Seasoning- 3 Tbsp granulated sugar (sweetness adjustable)

- 1 Tbsp fine gochugaru (Korean chili flakes)
- 3 Tbsp thick gochujang (Korean chili paste)
- 1 tsp minced garlic

Cooking Instructions
Step 1
First, thoroughly wash the fresh cucumbers under running water. Trim off the ends, then thinly slice them diagonally about 0.5 cm thick. Place the sliced cucumbers in a bowl, add 1 tablespoon of coarse salt, mix well, and let them sit for about 10 minutes to salt. This process wilts the cucumbers slightly while maintaining their crisp texture.
Step 2
While the cucumbers are salting, peel the onion and slice it thinly into julienne strips. Wash and peel the carrot, then julienne it to a similar thickness as the cucumber. Set the julienned vegetables aside in a separate bowl.
Step 3
Now, let’s make the special seasoning that determines the flavor of your cucumber salad! In a bowl, combine 3 tablespoons of granulated sugar, 1 tablespoon of soy sauce, 1 tablespoon of fine gochugaru, 3 tablespoons of thick gochujang, and 1 teaspoon of minced garlic. Mix them together until smooth, ensuring there are no lumps. If you prefer less sweetness, feel free to adjust the amount of sugar to your taste.
Step 4
After salting for 10 minutes, lightly rinse the cucumbers under cold running water to remove excess salt. Gently squeeze out any excess water with your hands, being careful not to crush them. Place the squeezed cucumbers in a large bowl with the julienned onion and carrot. Add all the prepared seasoning to the bowl and gently toss with your hands. It’s important to mix gently to avoid breaking the cucumbers. Your delicious and crisp seasoned cucumber salad is now ready!
