Main Ingredients- 1 bag Mung bean sprouts (approx. 300-400g)
- 1 stalk Green onion (approx. 20cm length)
- 1 Chili pepper (optional, for a spicy kick; use Korean green chili or red chili)
Seasoning- 2 Tbsp Soy sauce (Jin Ganjang)
- 1 Tbsp Soup soy sauce (Guk Ganjang, or fish sauce can be substituted)
- 1 tsp Coarse sea salt (or regular salt)
- 1 Tbsp Sesame seeds (whole or crushed)
- 2 Tbsp Soy sauce (Jin Ganjang)
- 1 Tbsp Soup soy sauce (Guk Ganjang, or fish sauce can be substituted)
- 1 tsp Coarse sea salt (or regular salt)
- 1 Tbsp Sesame seeds (whole or crushed)
Cooking Instructions
Step 1
First, wash the mung bean sprouts thoroughly. Place the washed sprouts in a pot with water and cover with a lid. Once the water starts boiling (you hear a bubbling sound), turn off the heat immediately. Let it sit covered for about 1 more minute, then drain thoroughly in a colander. Be careful not to overcook them, as this will make them lose their crispness. It’s a good idea to spread the drained sprouts on a rack to let them cool down slightly.
Step 2
Finely chop the green onion. If you prefer a bit of spice, wash the chili pepper, remove the seeds, and mince it finely. Place the drained mung bean sprouts in a mixing bowl. Add the chopped green onion, minced chili pepper (if using), and coarse sea salt.
Step 3
Now, add the seasoning ingredients: soy sauce, soup soy sauce, and sesame seeds. Gently mix everything together with your hands by lightly tossing and folding the sprouts. Avoid pressing or squeezing them too hard, as this can break them. Just combine them until the seasoning is evenly distributed.
Step 4
And there you have it – a perfectly crisp and delicious seasoned mung bean sprouts (Sukju Namul)! This dish is fantastic served alongside freshly cooked rice. It’s a simple yet flavorful side dish that will surely whet your appetite.
