  • 2 Tbsp green onion, finely chopped
  • 0.5 Tbsp coarse salt (for boiling bean sprouts)

Seasoning Ingredients

  • 1 Tbsp red chili powder
  • 1 Tbsp tuna extract (or fish sauce, soy sauce, anchovy sauce)
  • 0.5 Tbsp minced garlic
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp sesame oil

Cooking Instructions

Carefully trim the bean sprouts. Remove any excessively long roots or any sprouts that are damaged or have peeling skins for a cleaner final dish.

Fill a bowl with cold water, enough to cover the bean sprouts. Gently swirl them with your hands to wash. Repeat rinsing 2-3 times, then drain thoroughly in a colander. Excess water can make the seasoned dish watery.

Adding 0.5 Tbsp of coarse salt while boiling the bean sprouts helps them stay crisp and reduces any fishy odor. Place the bean sprouts in a pot and add 300ml of water.

1. **Steaming Method (with lid):** Bring water to a boil over high heat with the lid on. Once steam starts escaping from under the lid, reduce to medium heat and cook for 4-5 minutes. Quickly remove the cooked sprouts and spread them out on a wide bowl to cool down.

2. **Blanching Method:** Use plenty of water (about 3 cups). Once the water boils, add 0.5 Tbsp of coarse salt. Then, add the bean sprouts and gently stir them for 4-5 minutes. Afterwards, remove and cool them, or rinse in cold water to stop the cooking process.

**Tip for Beginners:** Covering the pot while boiling can sometimes lead to a fishy smell. If you’re new to cooking bean sprouts or unsure, it’s safer and easier to cook them with the lid off.
