Main Ingredients- 1 bunch chives
- 1 onion
- 4 cheongyang peppers (Korean chili peppers)
Seasoning Ingredients- 1/2 cup gochugaru (Korean chili flakes) (using a paper cup)
- 3/4 cup anchovy fish sauce
- 1/2 cup plum extract (maesilcheong)
- 1 Tbsp sugar
- 2 Tbsp minced garlic
- 1/2 Tbsp minced ginger
- A pinch of black pepper
- 1/2 cup gochugaru (Korean chili flakes) (using a paper cup)
- 3/4 cup anchovy fish sauce
- 1/2 cup plum extract (maesilcheong)
- 1 Tbsp sugar
- 2 Tbsp minced garlic
- 1/2 Tbsp minced ginger
- A pinch of black pepper

Step 1
The key to a great chive salad is thorough washing. First, cut the fresh chives into manageable lengths, about 5-7 cm. Then, rinse them thoroughly under running water several times to remove any dirt or impurities. After washing, drain the chives well in a colander for at least 20 minutes. This ensures the dressing adheres properly without being watery.
Step 2
Thinly slice the onion into strips. This adds a nice crunch and balances the spiciness. The cheongyang peppers will provide a pleasant heat. Remove the stems and slice them diagonally into bite-sized pieces. If you prefer less spice, feel free to adjust the number of peppers.

Place the well-drained chives into a large bowl. Now, add the gochugaru, about half a paper cup, which is essential for the Gyeongsang-do style. Next, pour in 3/4 cup of anchovy fish sauce. Gently mix the chives to coat them evenly with the chili flakes and fish sauce. Be careful not to mix too vigorously, as this can make the chives mushy and reduce their crispiness.

Now, add all the remaining seasoning ingredients. Toss in the sliced onion, diagonally cut cheongyang peppers, 2 Tbsp minced garlic, 1/2 Tbsp minced ginger, 1 Tbsp sugar, a pinch of black pepper, and 1/2 cup plum extract. Gently mix everything together until well combined. (Tip: Plum extract adds sweetness and depth, but the salad is also delicious without it. Feel free to adjust or omit it according to your preference.)

Instead of kneading or pressing the chives, it’s best to gently toss them to ensure all the ingredients are well incorporated. Mix gently so the seasoning seeps into the chives. After mixing, let it sit for about 20 minutes, then gently toss again. This second toss helps the seasoning distribute evenly and deepen the flavor.
Step 6
Finally, after the initial 20 minutes, give it one more gentle toss to ensure the seasoning is fully integrated. Transfer the chive salad to an airtight container. Refrigerate and let it mature for a bit before serving. This chilling and maturing process enhances the crispiness and flavor, making it even more delicious.
