Main Ingredients

  • 1 small summer radish
  • 1/2 bunch chives

Seasoning

  • 1.5 Tbsp salt
  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 1 tsp minced garlic
  • 1 Tbsp 2x concentrated vinegar
  • 1.5 Tbsp sugar
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Wash and prepare the small summer radish. Using a mandoline slicer will help you cut the radish evenly and beautifully. Julienne the radish into strips that are not too thin.

Sprinkle 1.5 Tbsp of salt over the julienned radish and let it sit for about 5 minutes to lightly pickle. This process wilts the radish and draws out moisture, helping to achieve a crispier texture.

Summer radishes are very watery, so a lot of liquid will accumulate during the pickling process. Do not wash the radish. Instead, squeeze out as much of the liquid as possible directly from the radish. If you find it too salty after squeezing, you can rinse it briefly in cold water to adjust the saltiness.

Add the washed and drained chives to the squeezed radish strips. Cut the chives into bite-sized pieces. Then, add the gochugaru, minced garlic, 2x concentrated vinegar, and sugar. Mix well to ensure the seasonings are evenly distributed.

Gently mix everything together with your hands until the seasonings are well combined with the radish and chives. Finally, sprinkle generously with toasted sesame seeds and give it a light toss.
