This is a fresh chives salad, seasoned to be sweet, sour, and spicy, featuring seasonal chives and onions. It’s perfect for livening up your appetite when mixed with barley rice in a bowl. Vegetable Ingredients
- Fresh chives: 170g
- Sweet onion: 60g
- Red chili pepper: 1 piece
Flavorful Seasoning
- Fine red chili powder: 2 Tbsp
- Savory anchovy sauce (fish sauce): 2 Tbsp
- Sugar (for sweetness): 1 Tbsp
- Plum extract (for sweet and sour taste): 3 Tbsp
- Sesame oil (for nutty aroma): 2 Tbsp
- Toasted sesame seeds: 2 Tbsp
- Fine red chili powder: 2 Tbsp
- Savory anchovy sauce (fish sauce): 2 Tbsp
- Sugar (for sweetness): 1 Tbsp
- Plum extract (for sweet and sour taste): 3 Tbsp
- Sesame oil (for nutty aroma): 2 Tbsp
- Toasted sesame seeds: 2 Tbsp
Cooking Instructions
Step 1
First, prepare the fresh vegetable ingredients for the chives salad. Pick out any yellowed, wilted, or spoiled leaves from the chives. Rinse them thoroughly under running water by gently rubbing them with your hands to remove any dirt.

Cut the rinsed chives into manageable pieces, about 4cm in length. Cutting them to this size ensures the dressing coats them well and makes them easy to eat.

Slice the onion thinly, about 0.3cm thick. Cut the red chili pepper diagonally to create a visually appealing garnish. You can also use other colored bell peppers if you like.

Now, let’s make the delicious seasoning. In a large bowl, combine 2 Tbsp of fine red chili powder, 2 Tbsp of savory anchovy sauce for umami, 1 Tbsp of sugar for sweetness, and 3 Tbsp of plum extract for that signature sweet and sour kick. Finally, add 2 Tbsp of nutty sesame oil and a generous 2 Tbsp of toasted sesame seeds for aroma.

Mix all the seasoning ingredients in the bowl with a spoon until well combined. A key tip for making delicious chives salad is to avoid over-mixing the chives, as this can release a raw grassy flavor. It’s best to prepare the dressing first, then gently toss the chives in it.
