Eolgalgi Kimchi Ingredients

  • 500g Eolgalgi lettuce (about 1 bundle)
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Apple (to be blended)
  • 3 Tbsp Fish Sauce
  • 1 Tbsp Fermented Shrimp (minced)
  • 2 Tbsp Minced Garlic
  • 1 Tbsp Plum Extract (Maesilcheong)
  • 1/2 Tbsp Sugar or Honey
  • 1 Tbsp Lemon Juice or Vinegar
  • A pinch of Sesame Seeds

Cooking Instructions

First, prepare the apple, which is the key ingredient for the seasoning. Wash half an apple, remove the core, and blend it until smooth in a blender. Strain the blended apple through a fine-mesh sieve to get clear apple juice, which will result in a cleaner seasoning.

In the strained apple juice, add all the seasoning ingredients for the Geotjeori and mix well. Combine 3 Tbsp of Gochugaru (Korean chili flakes), 3 Tbsp of fish sauce for umami, 1 Tbsp of minced fermented shrimp for depth of flavor, 2 Tbsp of minced garlic for a pungent kick, 1 Tbsp of plum extract for sweetness and tang, 1/2 Tbsp of sugar or honey to adjust sweetness, and 1 Tbsp of lemon juice or vinegar for a refreshing zest. Stir until the seasoning is well combined and delicious.

Now it’s time to prepare the Eolgalgi. Take 500g of fresh Eolgalgi, trim off the roots, and remove any wilted or dirty leaves. Chop each leaf into 2-3 bite-sized pieces. Make sure to remove excess water, as too much moisture can dilute the seasoning and make the Geotjeori watery.
