Dressing Ingredients

  • 3 Tbsp Fish Sauce (anchovy or sand lance)
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Tbsp Minced Garlic
  • 3 Tbsp Plum Extract (Maesilcheong)
  • 1 Tbsp Vinegar
  • Plenty of Toasted Sesame Seeds
  • 1 Tbsp Sesame Oil

Cooking Instructions

Carefully wash the spring cabbage by removing any wilted outer leaves and rinsing thoroughly under cold water. Cut the cabbage diagonally into bite-sized pieces (about 2-3 cm wide), ensuring you keep the leaves and stems connected. It’s best to cut them slightly thick to maintain a nice crunch.

In a separate bowl, combine all the dressing ingredients: fish sauce, gochugaru, minced garlic, plum extract, and vinegar. Mix well with a spoon. Set aside the sesame seeds and sesame oil to be added at the end.
