My mother used to say, “You need to eat lots of bean sprouts to grow taller,” and they were a frequent and affordable addition to our meals. Along with grilled mackerel and dried-seaweed soup, bean sprouts were rotated into our menu, helping me grow up strong and healthy without ever getting sick. Mom’s love is truly in this dish, and even now, I always buy several bags of bean sprouts whenever I visit Gupo Market. Main Ingredients

  • 1 bag fresh bean sprouts
  • A small bunch of scallions or green onions
  • 1 cup anchovy-kelp broth
  • 1 Tbsp soju (or cooking wine like Mirin or Myeunghyang)

Seasoning

  • A pinch of Korean sea salt (or regular salt)
  • 1/2 Tbsp onion extract (or corn syrup)
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, prepare the fresh bean sprouts. If there are any dirty or spoiled tails, trim them cleanly.

Place the bean sprouts in a pot. Add 1 cup of anchovy-kelp broth, 1 Tbsp of soju (or cooking wine), and a pinch of sea salt. Cover with a lid and bring to a boil over high heat.

While the bean sprouts are boiling, wash the scallions or green onions thoroughly.

Slice the washed green onions into bite-sized pieces (about 2-3 cm long). Slice them thinly as they will be used as a garnish.

Once the water in the pot starts boiling, open the lid and flip the bean sprouts. (This helps them cook evenly!) Once it boils again, open the lid, add the onion extract (or corn syrup), the sliced green onions, and sprinkle with sesame seeds to finish.

Finally, before serving the bean sprout salad, let it cool slightly with the lid open. This will help maintain the vibrant color of the green onion garnish, making it look even more appealing.
