First, wash the 2 Korean radishes thoroughly under running water. It’s best not to peel the radishes; just remove any dirt or debris from the surface. Trim off the very top and bottom ends slightly.

Cut the prepared radishes into bite-sized pieces, about 1cm to 1.5cm thick. If they are too thin, the texture will be diminished, and if too thick, the seasoning may not penetrate well. Aim for a moderate thickness.

Finely chop 1 medium onion. Adding onion enhances the kimchi’s savory flavor and natural sweetness.

In a blender, combine the finely chopped onion, minced garlic (2 handfuls), cooked rice (3 Tbsp), and water (1 cup). Blend until smooth. Blending rice into the mixture makes the kimchi smoother and tastier.
