Main Ingredients- 2 fresh carrots (medium size)
- 1 Tbsp honey
- 1 Tbsp vinegar
- 1 tsp salt (about a pinch)
- Pinch of black pepper
- 1/2 fresh lemon
- 2 Tbsp extra virgin olive oil

First, wash and prepare 2 fresh carrots. Using a julienne peeler is convenient, but if you don’t have one, carefully cut the carrots into thin, long strips with a knife. Aim for uniform thickness for the best texture.
